This coffee comes from the Las Lajas Micromill in Costa Rica and is very well known for its honey processing and natural processing of coffee. The chances of you finding a coffee from this mill at other roasteries are very high. While they may or may not be the same offering as ours, they are all sure to be vibrant and exciting coffees.

This coffee is overflowing with sweetness. Just smelling the green coffee before it is roasted smells like a candy shop. We roast this coffee light and stretch out the roast to really open up the sweetness in the cup. 


Brewing ratio recommendation (grams of coffee : water)

1:18 to start - adjust water ratio to 17g for a stronger cup, and 19g for a lighter cup


About the honey process: 

The honey process is an in-between of washed and natural process coffees. When ripe coffee cherries are delivered to the mill, they are de-pulped and a certain amount of mucilage is left on the seed to dry. The percentage of mucilage left on the seed to dry will vary depending on what type of honey process the mill is looking to achieve: white honey, yellow honey, or black honey with each one varying in percentage of mucilage.
